We've been hard at work since the grand opening of our taproom on August 29, 2020. Our mead has already been shipped to 6 states, there are multiple barrels filled with mead that should be going into bottles in the next month or so, more batches of mead are being started, session meads should be available in cans soon, we started offering free WiFi, and the final touches are being put on our mead club...the Kupfer Klub "Copper Club".
Jasper’s first meadery, Waldmet Cellars, will host a grand opening celebration on August 29, 2020 from 1-8 p.m. for its brand-new taproom. A wide selection of meads and other products will be available at the new taproom. For the grand opening celebration, there will be 6+ meads on draft and a few more in bottles. From classic honey to fruit and herb-infused varieties. Other varieties will be announced soon when they are available for purchase.
Our farm is located an hour north of Atlanta, GA in Jasper. It is dedicated to the mission of creating a well-balanced ecosystem and rich soils that produce nutrient-dense foods (and drinks), while treating the environment and the animals with respect. Our primary goal is to establish heavily-producing, mixed orchard & vineyard systems, that are easy to manage and require minimal off-farm inputs.

Most simply, mead is a wine made with honey. It is fermented with three basic ingredients: honey, water, and yeast. However, there are many different styles of mead, which are based on the basic ingredients (e.g., honey) and flavorings (e.g., herbs, spices) added, degree of sweetness, alcoholic strength, degree of carbonation, and even country of origin.
