This Riesling Orange Blossom Honey Pyment with Elderflower starts off subtle but the levels of complexity start to slowly unfold from there. Crafted from Orange Blossom Honey, Riesling Grapes, and Elderflowers. - Dry • 13% alc./vol.

Barrel-Aged

Pfeffernüsse

A full-strength, barrel-aged version of our Gewürzkuchen "Spice Cake" session mead. A full-bodied mead made with avocado honey, figs, spices & herbs* aged first in a French oak Grgich Hills Estate Cabernet Sauvignon/Merlot barrel, then a Woodford Reserve Bourbon barrel. - Dry • 13% alc./vol.

Anbruch "Beginning"

A mead made with wildflower honey, coffee, blackberries, and raspberries. The coffee was specially roasted for us using 100% solar power. Aged in a Templeton Rye Whiskey barrel. - Off Dry • 13% alc./vol.

Apfel-Honigwein "Apple Honey Wine"

A traditional Cyser aged in Sazerac 13yr and Heaven Hill whiskey barrels. Northern Spy apples pair up with wildflower honey and start to sing with the integration of the barrel notes. - Semi-sweet • 13% alc./vol.

Strandurlaub "Beach Vacation"

A tropical mead aged in a Jamaican Rum barrel. Crafted from wildflower honey, soursop, and tangerine. Then flavored with Azacca™, Idaho 7™, and Zythos® hops and a healthy dose of meadowfoam honey. Strong citrus and tropical fruit notes combine with vanilla, butterscotch, coconut, and a bit of toasted marshmallow. One sip will whisk you away to the islands. This is a collaboration with Pendley Creek Brewing Company. They hand-selected the hops and also lent a hand in making it. - Semi-sweet • 13% alc./vol.

Wissen "Knowledge"

Inspired by the Boulevardier. A mead made with wildflower honey, tangerine, Belgian candi syrup, and lots of herbs & spices (18 different ones*), then aged in a Sagamore Rye Whiskey barrel. - Semi-sweet • 13% alc./vol.

*Orange Peel, Lemon Peel, Dandelion Root, Gentian Root, Anise Seed, Fennel Seed, Mugwort, Marjoram, Sage, Thyme, Rosemary, Lavender, Chamomile, Cinnamon, Cloves, Star Anise, Cardamom, and Black Pepper

Sour

Verwandlung "Metamorphosis"

A semi-sweet lactic acid sour hydromel mead crafted with wildflower honey and flavored with a unique blend of herbs. Aged in Wine Barrels. Aged first in a French oak Grgich Hills Estate Cabernet Sauvignon/Merlot barrel for 7 months and then in bottle for 1 full year before release. This light and refreshing sour mead is far greater than the sum of its ingredients and is perfect to enjoy during hot weather, but is still overflowing with complexity.

Erwägen "To Reflect Upon"

A more sorghum-forward version of our Schwarzwald "Black Forest" mead made with Wildflower Honey, Sorghum Syrup, Tart Cherry, and a variety of herbs* aged for 6 months in a Jack Daniel's Tennessee Whiskey barrel. This dark and mysterious mead is intended to be enjoyed slowly; savoring its complexity as you reflect upon your day.

Apple Wine Crafted from North Georgia (Ellijay) Apples and Cranberry Juice then flavored with Brown Sugar, Wildflower Honey, and Orange - Dry • 8% alc./vol.

Wine

Barbera

A red wine made with 2020 California Barbera grapes. Flavors of cherries, strawberries and raspberries. - Dry • 13% alc./vol.

Wermut "Vermouth"

A dry white vermouth that started with Seyval Blanc from North Carolina that was fortified with locally-distilled neutral spirits and infused with a unique blend of 15 botanicals*. - Dry • 20% alc./vol.
